Spicy Nepali potato salad with sesame and timur
Ingredients
- - 4 large potatoes, boiled and cubed
- - 2 tablespoons sesame seeds, toasted
- - 1 teaspoon timur (Szechwan pepper)
- - 3 green chilies
- - 1/2 cup cilantro
- - 2 tablespoons lemon juice
- - 1 teaspoon turmeric
- - 1/2 cup onion, finely sliced
- - 2 tablespoons mustard oil
- - Salt to taste
Instructions

1Toast sesame seeds in a dry pan until golden. Let cool.

2Grind sesame seeds, timur, green chilies, and half the cilantro into a paste.

3Mix the paste with lemon juice, turmeric, salt, and mustard oil.

4Toss boiled potato cubes with the dressing.

5Add sliced onions and remaining cilantro.

6Let marinate for at least 15 minutes before serving.
