Spicy Nepali potato salad with sesame and timur

Ingredients

  • - 4 large potatoes, boiled and cubed
  • - 2 tablespoons sesame seeds, toasted
  • - 1 teaspoon timur (Szechwan pepper)
  • - 3 green chilies
  • - 1/2 cup cilantro
  • - 2 tablespoons lemon juice
  • - 1 teaspoon turmeric
  • - 1/2 cup onion, finely sliced
  • - 2 tablespoons mustard oil
  • - Salt to taste

Instructions

    Toast sesame seeds in a dry pan until golden. Let cool.

    Grind sesame seeds, timur, green chilies, and half the cilantro into a paste.

    Mix the paste with lemon juice, turmeric, salt, and mustard oil.

    Toss boiled potato cubes with the dressing.

    Add sliced onions and remaining cilantro.

    Let marinate for at least 15 minutes before serving.
