Mixed Vegetable Tarkari
Vegetarian Recipe
Everyday Nepali mixed vegetable curry
Ingredients
- - 1 cup potatoes, cubed
- - 1 cup cauliflower florets
- - 1/2 cup green beans, cut
- - 1/2 cup carrots, sliced
- - 1/2 cup green peas
- - 1 cup onion, sliced
- - 1 cup tomatoes, chopped
- - 1 tablespoon ginger-garlic paste
- - 1 teaspoon turmeric
- - 1 tablespoon cumin powder
- - 1/2 teaspoon chili powder
- - 1/4 teaspoon fenugreek seeds
- - 3 tablespoons oil
- - 1 cup water
- - Salt to taste
- - Fresh cilantro for garnish
Instructions

1Heat oil in a pan. Add fenugreek seeds and let splutter.

2Add onions and fry until golden.

3Add ginger-garlic paste, turmeric, cumin and chili powder. Stir for 30 seconds.

4Add potatoes and carrots first (they take longer). Stir-fry for 3 minutes.

5Add remaining vegetables except peas and tomatoes. Stir well.

6Add tomatoes, water and salt. Cover and cook until vegetables are tender.

7Add peas in the last 5 minutes.

8Garnish with cilantro. Serve with dal and rice.
