Mixed Vegetable Tarkari

Everyday Nepali mixed vegetable curry

Ingredients

  • - 1 cup potatoes, cubed
  • - 1 cup cauliflower florets
  • - 1/2 cup green beans, cut
  • - 1/2 cup carrots, sliced
  • - 1/2 cup green peas
  • - 1 cup onion, sliced
  • - 1 cup tomatoes, chopped
  • - 1 tablespoon ginger-garlic paste
  • - 1 teaspoon turmeric
  • - 1 tablespoon cumin powder
  • - 1/2 teaspoon chili powder
  • - 1/4 teaspoon fenugreek seeds
  • - 3 tablespoons oil
  • - 1 cup water
  • - Salt to taste
  • - Fresh cilantro for garnish

Instructions

    Heat oil in a pan. Add fenugreek seeds and let splutter.

    Add onions and fry until golden.

    Add ginger-garlic paste, turmeric, cumin and chili powder. Stir for 30 seconds.

    Add potatoes and carrots first (they take longer). Stir-fry for 3 minutes.

    Add remaining vegetables except peas and tomatoes. Stir well.

    Add tomatoes, water and salt. Cover and cook until vegetables are tender.

    Add peas in the last 5 minutes.

    Garnish with cilantro. Serve with dal and rice.
