Appetizer Recipe
Newari black lentil patties - crispy on outside, soft inside
Ingredients
- - 2 cups black lentils (urad dal), soaked overnight
- - 1/2 cup onion, finely chopped
- - 2 green chilies, minced
- - 1 tablespoon ginger, minced
- - 1/2 teaspoon turmeric
- - 1/2 teaspoon cumin seeds
- - 1/4 teaspoon asafetida
- - Salt to taste
- - Oil for frying
Instructions

1Drain soaked lentils. Grind into a thick, smooth paste without adding water. The batter should be thick enough to hold shape.

2Add onion, chilies, ginger, turmeric, cumin seeds, asafetida and salt. Mix well.

3Let batter rest for 30 minutes.

4Heat oil in a flat pan. Drop spoonfuls of batter and flatten into round patties.

5Fry on medium heat until golden brown on both sides.

6Drain on paper towels.

7Serve hot with achar or as part of a Newari feast.
