Newari black lentil patties - crispy on outside, soft inside

Ingredients

  • - 2 cups black lentils (urad dal), soaked overnight
  • - 1/2 cup onion, finely chopped
  • - 2 green chilies, minced
  • - 1 tablespoon ginger, minced
  • - 1/2 teaspoon turmeric
  • - 1/2 teaspoon cumin seeds
  • - 1/4 teaspoon asafetida
  • - Salt to taste
  • - Oil for frying

Instructions

    Drain soaked lentils. Grind into a thick, smooth paste without adding water. The batter should be thick enough to hold shape.

    Add onion, chilies, ginger, turmeric, cumin seeds, asafetida and salt. Mix well.

    Let batter rest for 30 minutes.

    Heat oil in a flat pan. Drop spoonfuls of batter and flatten into round patties.

    Fry on medium heat until golden brown on both sides.

    Drain on paper towels.

    Serve hot with achar or as part of a Newari feast.
