Newari rice crepe topped with minced meat and egg - Nepali pizza

Ingredients

  • Batter:
  • - 2 cups rice flour
  • - 1 cup water
  • - Pinch of salt
  • Topping:
  • - 1/2 lb minced chicken or buff
  • - 1 cup onion, finely chopped
  • - 2 eggs
  • - 1 tablespoon ginger-garlic paste
  • - 1/2 teaspoon turmeric
  • - 1 teaspoon cumin powder
  • - 2 green chilies, minced
  • - Fresh cilantro, chopped
  • - Oil for cooking
  • - Salt and pepper

Instructions

    Mix rice flour with water and salt to make a thin, pourable batter. Let rest for 15 minutes.

    Season minced meat with ginger-garlic paste, turmeric, cumin, salt and pepper.

    Heat a flat non-stick pan with a little oil.

    Pour batter in a thin layer, spreading in circular motion.

    Spread seasoned meat evenly on top. Add chopped onions and chilies.

    Crack an egg on top and spread slightly.

    Cover and cook on medium heat until edges are crispy and egg is set.

    Garnish with cilantro. Serve hot with tomato achar.
