Chicken Tarkari

Home-style Nepali chicken curry
Ingredients
- - 2 lbs chicken, cut into pieces
- - 2 cups potatoes, cubed
- - 1 cup onion, sliced
- - 1 cup tomatoes, pureed
- - 1 tablespoon ginger-garlic paste
- - 1 teaspoon turmeric
- - 1 tablespoon cumin powder
- - 1 teaspoon coriander powder
- - 1 teaspoon chili powder
- - 1/2 teaspoon garam masala
- - 1/4 teaspoon fenugreek seeds
- - 3 tablespoons oil
- - 1.5 cups water
- - Salt to taste
- - Cilantro for garnish
Instructions

1Heat oil, add fenugreek seeds and let them splutter.

2Add onions and fry until golden. Add ginger-garlic paste, cook for a minute.

3Add all ground spices (except garam masala), stir for 30 seconds.

4Add chicken pieces and brown well on all sides.

5Add tomato puree, cook until oil separates.

6Add water and potatoes. Bring to boil, then simmer covered for 30-35 minutes until chicken is cooked and potatoes are tender.

7Sprinkle garam masala, garnish with cilantro. Serve with rice or roti.
