Home-style Nepali chicken curry

Ingredients

  • - 2 lbs chicken, cut into pieces
  • - 2 cups potatoes, cubed
  • - 1 cup onion, sliced
  • - 1 cup tomatoes, pureed
  • - 1 tablespoon ginger-garlic paste
  • - 1 teaspoon turmeric
  • - 1 tablespoon cumin powder
  • - 1 teaspoon coriander powder
  • - 1 teaspoon chili powder
  • - 1/2 teaspoon garam masala
  • - 1/4 teaspoon fenugreek seeds
  • - 3 tablespoons oil
  • - 1.5 cups water
  • - Salt to taste
  • - Cilantro for garnish

Instructions

    Heat oil, add fenugreek seeds and let them splutter.

    Add onions and fry until golden. Add ginger-garlic paste, cook for a minute.

    Add all ground spices (except garam masala), stir for 30 seconds.

    Add chicken pieces and brown well on all sides.

    Add tomato puree, cook until oil separates.

    Add water and potatoes. Bring to boil, then simmer covered for 30-35 minutes until chicken is cooked and potatoes are tender.

    Sprinkle garam masala, garnish with cilantro. Serve with rice or roti.
