Chicken Bhutuwa

Dry stir-fried chicken with traditional Nepali spices
Ingredients
- - 1.5 lbs chicken, cut into small pieces
- - 1 cup onion, sliced
- - 1 cup tomatoes, chopped
- - 1 tablespoon ginger-garlic paste
- - 2 green chilies, sliced
- - 1 teaspoon turmeric
- - 1 tablespoon cumin powder
- - 1/2 teaspoon timur, ground
- - 1/4 teaspoon fenugreek seeds
- - 3 tablespoons oil
- - Salt to taste
- - Fresh cilantro for garnish
Instructions

1Heat oil in a wok or pan. Add fenugreek seeds and let splutter.

2Add chicken pieces and fry until golden brown on all sides.

3Add onions and fry until softened.

4Add ginger-garlic paste, turmeric, cumin and green chilies. Stir well.

5Add tomatoes and salt. Cook on high heat, stirring frequently.

6Continue cooking until chicken is done and the dish is dry (no gravy).

7Add ground timur and toss well.

8Garnish with cilantro. Serve hot with chiura or rice.
