Gorkhali Chicken Chili

Spicy grilled chicken sauteed in chili sauce
Ingredients
- - 2 lbs chicken breasts, skinned and boned
- - 1 teaspoon garlic, minced
- - 1 teaspoon ginger, finely grated
- - 1 tablespoon fresh hot chili, minced
- - 1 tablespoon cumin powder
- - 1 cup onion, finely chopped
- - 1 cup tomato, chopped
- - 2 tablespoons honey
- - 2 cups red bell pepper, cut into 1-inch pieces
- - 1 cup scallion, cut into 1-inch length
- - 2 tablespoons cooking oil
- - 5 dry whole red chilies
- - Salt and Pepper
- - 2 tablespoons chopped cilantro
- Marinade:
- - 1 tablespoon cumin powder
- - 1 teaspoon turmeric
- - 1/4 teaspoon grated nutmeg
- - 1/2 teaspoon timur
- - 2 tablespoons lemon juice
- - 1 tablespoon chili paste
- - 1 tablespoon each garlic and ginger paste
- - 1/8 teaspoon asafetida
- - Salt and Pepper
Instructions

1Combine all marinade ingredients into a paste. Marinate chicken for at least four hours.

2Grill marinated chicken until cooked through, about ten minutes. Cut into 1-inch strips.

3Blend garlic, ginger, fresh chili, cumin, onions, tomatoes, honey, salt and pepper into a paste.

4Heat oil in a pan. Fry dry red chilies until dark.

5Add the spice paste and saute until oil separates, about 5-8 minutes.

6Add grilled chicken, bell pepper and scallions. Stir to coat with spices.

7Cook until vegetables are tender. Garnish with cilantro.

8Serve with rice or roti.
