Fermented greens pickle - tangy and spicy side dish

Ingredients

  • - 1 cup gundruk (dried fermented greens)
  • - 2 tablespoons sesame seeds, toasted
  • - 1 teaspoon timur
  • - 2 green chilies
  • - 1 tablespoon ginger, minced
  • - 2 tablespoons mustard oil
  • - 1 tablespoon lemon juice
  • - 1/2 cup onion, finely chopped
  • - 1/4 cup tomato, chopped
  • - Salt to taste
  • - Fresh cilantro for garnish

Instructions

    Soak gundruk in warm water for 10 minutes. Squeeze out excess water.

    Grind sesame seeds and timur into a coarse powder.

    Heat mustard oil until smoking point, then cool slightly.

    Mix gundruk with sesame-timur powder, green chilies, ginger, oil and lemon juice.

    Add onion, tomato and salt. Mix well.

    Let sit for 10 minutes to allow flavors to meld.

    Garnish with cilantro.

    Serve as a side dish with dal bhat.
