Paneer cheese cubes curried with mixed vegetables

Ingredients

  • - 1 lb paneer cheese, cubed (tofu can be substituted)
  • - 2 cups mushroom, sliced
  • - 1 cup red bell pepper, chopped
  • - 2 cups spinach, torn into pieces
  • - 1 cup onion, chopped
  • - 1 cup tomatoes, chopped
  • - 1 tablespoon garlic, minced
  • - 1 tablespoon ginger, minced
  • - 5 dry whole red chilies
  • - 1/2 cup whole cream
  • - 1 teaspoon turmeric
  • - 1 tablespoon curry powder
  • - 5 tablespoons oil
  • - Salt and Pepper
  • - 2 tablespoons cilantro, chopped

Instructions

    Heat 2 tablespoons oil in a non-stick pan. Brown paneer cubes on all sides. Set aside.

    Blanch mushrooms and bell pepper briefly in boiling water. Drain and place in ice bath.

    Heat remaining oil. Add turmeric and dried chilies, fry until chilies turn dark.

    Add onions and stir until lightly browned.

    Add garlic, ginger and curry powder. Fry for a minute.

    Add browned paneer and blanched vegetables. Stir-fry for 5 minutes.

    Add tomatoes, cream, salt and pepper. Cook for 5-8 minutes, adding water if needed.

    Fold in spinach to wilt. Garnish with cilantro.

    Serve with steamed rice.
