Paneer Bhutuwa
Vegetarian Recipe
Paneer cheese cubes curried with mixed vegetables
Ingredients
- - 1 lb paneer cheese, cubed (tofu can be substituted)
- - 2 cups mushroom, sliced
- - 1 cup red bell pepper, chopped
- - 2 cups spinach, torn into pieces
- - 1 cup onion, chopped
- - 1 cup tomatoes, chopped
- - 1 tablespoon garlic, minced
- - 1 tablespoon ginger, minced
- - 5 dry whole red chilies
- - 1/2 cup whole cream
- - 1 teaspoon turmeric
- - 1 tablespoon curry powder
- - 5 tablespoons oil
- - Salt and Pepper
- - 2 tablespoons cilantro, chopped
Instructions

1Heat 2 tablespoons oil in a non-stick pan. Brown paneer cubes on all sides. Set aside.

2Blanch mushrooms and bell pepper briefly in boiling water. Drain and place in ice bath.

3Heat remaining oil. Add turmeric and dried chilies, fry until chilies turn dark.

4Add onions and stir until lightly browned.

5Add garlic, ginger and curry powder. Fry for a minute.

6Add browned paneer and blanched vegetables. Stir-fry for 5 minutes.

7Add tomatoes, cream, salt and pepper. Cook for 5-8 minutes, adding water if needed.

8Fold in spinach to wilt. Garnish with cilantro.

9Serve with steamed rice.
