Momo Recipe
Traditional Nepali buffalo meat dumplings - the original street food favorite
Ingredients
- Dough for wrappers:
- - 5 cups all-purpose flour
- - 1 tablespoon oil
- - 1 cup water or as required
- - Pinch of salt
- Filling:
- - 2 lbs ground buffalo meat
- - 1 cup onion, finely chopped
- - 1/2 cup green onion, finely chopped
- - 1 tablespoon fresh garlic, minced
- - 1 tablespoon fresh ginger, minced
- - 1/2 teaspoon timur (Szechwan pepper)
- - 1/2 teaspoon turmeric
- - 1 tablespoon cumin powder
- - 1/4 cup fresh cilantro, chopped
- - 3 tablespoons cooking oil
- - Salt and Pepper
Instructions

1Combine all filling ingredients thoroughly. Refrigerate for at least one hour.

2Make dough by mixing flour, oil, salt and water. Knead until smooth. Rest for 15 minutes.

3Roll out thin wrappers about 3 inches in diameter.

4Place a tablespoon of filling in center, pleat edges together and seal tightly.

5Steam for 12-15 minutes until cooked through.

6Serve hot with spicy tomato achar and sesame chutney.
