Nepali style chicken noodles - popular street food

Ingredients

  • - 400g instant noodles
  • - 1 lb chicken, sliced thin
  • - 2 cups mixed vegetables (cabbage, carrots, bell peppers)
  • - 1 cup green onions, chopped
  • - 2 tablespoons soy sauce
  • - 1 tablespoon chili sauce
  • - 1 tablespoon ginger-garlic paste
  • - 1 teaspoon vinegar
  • - 3 tablespoons oil
  • - Salt and pepper to taste

Instructions

    Cook noodles according to package, drain and set aside.

    Heat oil in a wok over high heat. Add chicken and stir-fry until cooked. Remove and set aside.

    In the same wok, add more oil if needed. Stir-fry vegetables until crisp-tender.

    Add ginger-garlic paste, stir for 30 seconds.

    Return chicken to wok. Add noodles, soy sauce, chili sauce, vinegar.

    Toss everything together over high heat until well combined and heated through.

    Garnish with green onions. Serve hot.
