Crispy sweet spirals soaked in sugar syrup
Ingredients
- Batter:
- - 1 cup all-purpose flour
- - 2 tablespoons besan (gram flour)
- - 1/4 teaspoon baking soda
- - 1 cup warm water
- - 1/2 cup yogurt
- - Pinch of saffron
- - Oil for deep frying
- Sugar Syrup:
- - 2 cups sugar
- - 1 cup water
- - 1/4 teaspoon cardamom powder
- - Few drops of lemon juice
Instructions

1Mix flour, besan and baking soda. Add yogurt and warm water to make a smooth batter. It should be pourable but not too thin.

2Cover and ferment in a warm place for 2-3 hours. Batter should be slightly bubbly.

3Make sugar syrup by boiling sugar with water until one-string consistency. Add cardamom and lemon juice. Keep warm.

4Heat oil for deep frying to medium-high.

5Pour batter into a squeeze bottle or piping bag.

6Squeeze batter into hot oil in circular/spiral shapes.

7Fry until golden and crispy on both sides.

8Immediately dip hot jeri into warm sugar syrup for 30 seconds.

9Serve warm for best taste.
