Crispy sweet spirals soaked in sugar syrup

Ingredients

  • Batter:
  • - 1 cup all-purpose flour
  • - 2 tablespoons besan (gram flour)
  • - 1/4 teaspoon baking soda
  • - 1 cup warm water
  • - 1/2 cup yogurt
  • - Pinch of saffron
  • - Oil for deep frying
  • Sugar Syrup:
  • - 2 cups sugar
  • - 1 cup water
  • - 1/4 teaspoon cardamom powder
  • - Few drops of lemon juice

    Mix flour, besan and baking soda. Add yogurt and warm water to make a smooth batter. It should be pourable but not too thin.

    Cover and ferment in a warm place for 2-3 hours. Batter should be slightly bubbly.

    Make sugar syrup by boiling sugar with water until one-string consistency. Add cardamom and lemon juice. Keep warm.

    Heat oil for deep frying to medium-high.

    Pour batter into a squeeze bottle or piping bag.

    Squeeze batter into hot oil in circular/spiral shapes.

    Fry until golden and crispy on both sides.

    Immediately dip hot jeri into warm sugar syrup for 30 seconds.
